Avocado BLT with Spicy Mayo

If you’re looking to amp up the typical, mundane BLT, then look no further! This is one hardcore, ultimate BLT. I know, I probably sound like an infomercial. But I promise you, when you try this sandwich, an average BLT will simply not cut it for you anymore.

The flavor packed into this sandwich is simply indescribable. You will wish you never become full and the sandwich will go on forever. I’m not kidding. You should see the seriousness on my face as I type this.

When Dustin and I sink our teeth into these BLTs, we actually sit and eat in silence because we are so consumed with the goodness bursting from this sandwich.

They are extremely simple to make and they take no time at all.

You owe it to yourself to try this sandwich.

Time: Including prep – approximately 30-35 minutes

Serving Size – 4-5 sandwiches

Ingredients:

  • Lettuce of your choice
  • Bread of your choice
  • 1 pound of thick cut bacon
  • 5 tablespoons of Mayonnaise
  • 2 1/2 tablespoons of Sriracha
  • 1 medium onion (I like to use the Vidalia)
  • 1 large tomato
  • 2-3 avocados
  • Cilantro

Prep:

In a small bowl, mix 5 tablespoons of Mayonnaise and 2 1/2 tablespoons of Sriracha until blended well. If you’re only making two sandwiches, mix together only half of these amounts.

Cut onion, tomato, and avocados into half inch strips. Put to the side.

Break off lettuce strips, rinse, pat dry, and place aside.

Rinse and pat cilantro bunch dry. Then tear or chop cilantro and put aside.

Directions:

  1. In a small bowl, mix 5 tablespoons of Mayonnaise and 2 1/2 tablespoons of Sriracha until blended well.
  2. Cut onion, tomato, and avocados into half inch strips. Put to the side.
  3. Break off lettuce strips, rinse, pat dry, and place aside.
  4. Rinse and pat cilantro dry. Then tear or chop your desired amount from the bunch. Put to the side.
  5. Heat skillet on medium heat and add bacon. Cook until browned and crispy. Remove onto plate lined with paper towel to absorb some of the grease.
  6. Once the bacon is almost all cooked, begin to toast your bread. We do ours a bit differently than with a toaster, and it’s not necessarily the healthiest way. So this method of toasting is optional. We take about two tablespoons of bacon grease and place into a separate pan on medium heat. Then add two slices of bread, only toasting one side of each of the bread slices. Remove from skillet after about 3 minutes or until lightly golden.

Assembling the sandwich:

Place on slice of bread on your plate. If you used our toasting method make sure the toasted side is face down.

  1. Place bacon strips on the bottom.
  2. Place lettuce on top of the bacon.
  3. Place tomato on top of the lettuce.
  4. Place avocado on top of the tomato.
  5. Place onion over the avocado.
  6. Garnish with cilantro.

On the un-toasted side of the remaining slice of bread, spread spicy mayo. Then cover your sandwich with the slice of bread.

I recommend you cut the sandwich in half so it is easier to eat and the goodies don’t fall out.

Voila! Your masterpiece is ready!
