Ultimate Mushroom Blush Vodka Wine Sauce

Dustin and I have decided to come up with the ULTIMATE vodka, wine, blush sauce – and boy, this is one crazy-good recipe.

I’ve always preferred my vodka sauce to be hearty. I’ve had simple vodka and blush sauces in the past, and they were just “okay”. I enjoy getting bites of mushroom, onion, peas, and prosciutto in my vodka sauce. It adds so much flavor and depth.




One day when I decided to whip up a vodka sauce, I realized I didn’t have enough vodka, so I decided to improvise a bit. So, I threw in some wine that we had lying around.

We’ve played around with the amounts over each batch we made and have finally landed on this recipe.

It is truly the ultimate mushroom, blush, vodka, wine sauce you will ever try.


 Ingredients:

  • olive oil
  • 4 – 28 oz. cans of crushed tomatoes (I prefer Tuttorroso)
  • 2 medium onions, diced
  • 8 oz of frozen peas
  • 1/4 lb prosciutto, diced
  • 1/4 lb shiitake mushrooms, sliced
  • 3/4 lb oyster mushrooms, separated and cut from the base
  • 1/2 bulb of garlic, chopped
  • 2 tbsp of white sugar
  • 1 tbsp of dried basil
  • 1 tbsp of garlic powder
  • 1/2 cup of vodka
  • 2 cups of sweet white wine
  • 1 pint of heavy cream
  • salt, to taste
  • pepper, to taste




Directions:

  1. Prepare the onions, garlic, mushrooms, and prosciutto.
  2. Coat the bottom of a large, teflon coated sauce pot with approximately 2 Tbsp of olive oil and heat on medium.
  3. Add 2 medium diced onions, and 1/2 bulb of chopped garlic to the pot and sauté until translucent.
  4. Add 1/4 lb shiitake and 3/4 lb oyster mushrooms, and sauté for 5 minutes.
  5. Add 1/4 lb diced prosciutto and sauté for 5 minutes.
  6. Add 8 oz. peas and sauté for 5 minutes.
  7. Add 4 – 28 oz. cans of crushed tomatoes.
  8. Add 2 tbsp. sugar, 1 tbsp. basil, 1 tbsp. garlic powder, salt (to taste), and pepper (to taste), and cook for 15 minutes.
  9. Add vodka and wine.
  10. Add heavy cream and cook for an additional 30 minutes.
