Salsa de Ajo Garlic Sauce

Hello, hello!

Well, amid this Coronavirus scare, we’ve been making sure that whatever we cook lasts us for quite a while. As I’m sure you know, for years I’ve been very pro with making big batches of sauce and soup, as well as containor-ing up pre-made dinners.

Dustin had the idea to buy a pork shoulder during our last big food shop before we quarantined ourselves in the house. It only cost about $8.00 and will be able to feed us for at least five to six dinners. You can’t beat that, especially in times like this, when we have to make our food stretch for as long as possible.

Whenever we make a pork shoulder, we like to make a garlic aioli sauce to drizzle on top of the pork. Dustin came up with his own recipe for the garlic aioli sauce. It isn’t a thick sauce. It’s a thinner, lighter sauce, which I quite enjoy over the pork.

I use my magic bullet quite often, and to make this sauce, it’s pretty perfect because the ingredients are really minimal. It’s an easy recipe, and it would taste terrific over some grilled chicken, steak, grilled shrimp, salmon, and, of course, pork shoulder. YUM!

Ingredients:

  • 8 cloves of garlic
  • Juice of 1 lime
  • 1 heaping TBSP of mayonnaise
  • 1/4 Tsp of black pepper
  • 1/8 Tsp of salt
  • 1/4 Tsp of paprika
  • 1 Tsp of Extra Virgin Olive Oil

Directions:

  • Add 8 cloves of garlic to blender
  • Add juice of 1 lime
  • Add 1 heaping TBSP of mayonnaise
  • Add 1/4 Tsp of black pepper
  • Add 1/8 Tsp of salt
  • Add 1/4 Tsp of paprika
  • Add 1 Tsp of Extra Virgin Olive Oil
  • Blend until the garlic is pureed
  • Drizzle over your meat of choice
