Fancy Carrots

Today was a nice lazy writing day for me. I gotta say…I looooove those. Did a bit of blogging and worked on my screenplay edits for Twisted Fate. Hopefully soon I’ll actually allow myself to stop editing.

Anywhooo…this recipe has become an awesome Christmas Day side. Dustin and I have been making it for the past few years on Christmas, and we love it so much. The carrots have so much flavor. I literally devoured them this year.

This recipe is extremely easy to prepare. It takes about 45 minutes total in the oven, so it’s not too bad. The longest part of the process is cleaning and peeling the carrots, honestly.

I hope you give this recipe a whirl. It’s perfect for any holiday or a nice sit down dinner with the family.

Ingredients:

  • 2 bunches of organic carrots with stems
  • 3 Tbsp. of honey
  • 1 shallot, chopped
  • 2 cloves of garlic, roughly chopped
  • 2 Tbsp. of Wegman’s Shallot Thyme Finishing Butter
  • 2 Tbsp. of Wegman’s Garlic Cheese Finishing Butter
  • salt, to taste
  • pepper, to taste

Directions:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cut stems off carrots, leaving approximately 3 inches of stems on the carrots
  • Peel the carrots and clean well with a pairing knife.
  • Rinse carrots and place in a baking dish or tin.
  • Lightly drizzle with honey, approximately 3 Tbsp.
  • Top with shallot and garlic.
  • Top with 2 Tbsp. of Wegman’s Shallot Thyme Finishing Butter
  • Top with 2 Tbsp. of Wegman’s Garlic Cheese Finishing Butter
  • Season with salt and pepper, to taste
  • Bake in the oven for 40 min.
  • Change setting on oven to broil, and broil for 5 minutes.
  • Remove from oven and enjoy!
