Kimchi Fried Quinoa

Here’s a super tasty asian dish we created a while back. I sometimes make Kimchi Fried Rice, however this is a much healthier option.

I use our homemade Kimchi when making this side dish. The recipe for our homemade Sesame Kimchi can be found HERE.

This recipe is even good to eat the following day. The Kimchi gives the Quinoa a fantastic flavor. It’s become one of those dishes we make at least once a week.

Ingredients:

  • 1 cup of Quinoa (cooked)
  • 1 scrambled egg
  • 1 Tbsp of Olive Oil
  • 1 Tbsp of Sesame Oil
  • 1/4 cup of Soy Sauce (I use the low sodium.)
  • 1/2 cup Kimchi
  • 1 Tsp. of Rice Vinegar
  • 1 Tsp. of Garlic Powder

Directions:

  • Add 1/2 cup of Quinoa and 1 cup of water to a small pot and bring to a boil. Once it begins to boil, put the heat on simmer. Cover until Quinoa is cooked.
  • Scramble 1 egg and cook in a small pan. Set aside.
  • In a medium sized pan, add 1 Tbsp of Olive Oil and heat on medium.
  • Once the oil is hot, add the cooked Quinoa to the pan and mix.
  • Add 1 Tbsp of Sesame Oil, 1/4 cup of Soy Sauce, 1 Tsp of Rice Vinegar, and 1 Tsp. of Garlic Powder. Mix on and off for approximately 5 minutes.
  • Add 1/2 cup of Kimchi to the Quinoa and mix for another 2 minutes.
  • Add the scrambled egg and mix for 1 minute.
  • Enjoy!
